Oh my goodness I just whisked up the yummiest HEALTHY pancake recipe ever! Seriously! I took a bite in to hubby to try while he was on a work call and his reaction was priceless! He couldn’t say anything out loud without giving away to his client that he was being fed pancakes his end of the line – but his eyes nearly popped out of his head telling me how awesome they were.
These pancakes are gluten-free, wheat-free and dairy-free. They are filled with nutritious goodies and they will fill you up so they absolutely count as a meal – in fact they might just become a breakfast staple in our house as they take less than 5 minutes to whip up and they have all the macro and micronutrients you need in a good meal. I couldn’t ask for more!
These pancakes are a good source of protein, complex carbohydrate and omega 3 (one of the good kinds of fat). If you use the Juice PLUS+ Complete instead of a generic plant-based protein powder you have the added benefit of the Juice PLUS+ fruit and vegetable powder as well.
Although, remember, that cooking fruit and veg can destroy some of the phytonutrients. One of the benefits of the powders is that they have been processed at very low heats so as not to destroy ANY of the plant-based nutrients – so make sure you don’t go cooking all of your Juice PLUS+!
Without further ado here’s the recipe… Oh did I mention? It’s super simple! No great culinary skills needed here – I promise!
This recipe will make about 4 American Style (thick) Pancakes.
- 1 scoop of Juice PLUS+ Complete Vanilla (Or a scoop of your favourite plant-based protein powder)
- 2 eggs – whisked
- 1/2 banana – mashed
- 1 tablespoon of milled flaxseeds
- 1 teaspoon cinnamon
Combine the mixture well, pour a 1/4 cup of batter into a frying pan on a medium heat and cook until little bubbles start coming through the top. Flip!
Serve with some sliced fruit, a drizzle of honey or be really indulgent and have a drizzle of maple syrup. It has a higher sugar content but is still loaded with nutrients.
